Blueberry Sunflower Energy Bars

Blueberry Sunflower Energy Bars I could believe how close they came to the high priced ones I bought last week.

Wow! I was making Sunflower Butter for a friend of mine who is allergic to peanuts and cannot eat peanut butter. I made a mistake and came out with a great blueberry energy bar that taste great. Here is how it went...

I toasted my sunflower seeds in a large sauté pan over medium heat. To make peanut butter you need to puree them when they are smooth. I on the other hand got side track by the baseball game and let my seeds cool down. I tried to puree them until smooth and wasn't having any luck. 

I had already added the canola oil and honey to the mixture, and the mixture was coming out more like a dough than smooth butter. So I added half pint of blueberries. Decided to lay the mixture on to a cookie sheet about 1/4" thick. Topped it with some of the toasted sunflower seeds and baked it in the oven at 200 degrees for 15 minutes. After letting it cool and cutting them into 2" bars. I was excited to taste a wonderful all natural energy bar that had no additives or preservatives.

So here is the recipe:

Sunflower seeds                      8 cups

honey                                      4 tablespoons

canola oil                                 3 to 4 tablespoons

fresh blueberries                      half pint

salt                                          to taste

If you like them sweeter just add a little more honey.
